Take a French Martini, cross it with a Vampire, ditch the juice and add a splash of bubbly and you have given birth to a Vampire Kiss Martini. The taste of the drink itself is anything but scary, it’s actually very elegant and something that would work not only forHalloween, but for Valentine’s Day or any Champagne-worthy occasion. For it’s intended holiday, it is perfect because the Chambord gives it a dark, almost black color.
The rim on this cocktail is a little devious because the courtesy image suggests a syrup that drips along the edge while the written recipe indicates the standard sugar rim, which would be crystalline. If you want the syrupy look: drizzle a thin stream of grenadine (or a similar red syrup) on the inside of the rim of the glass. Practice and use frozen glasses for the best visual results.
1 1/2 oz Finlandia Vodka
1 1/2 oz Korbel Champagne
3/4 oz Chambord black raspberry liqueur
Red sugar for rimming
Rim the glass with red sugar (use food coloring) or drop in a set of wax vampire teeth for a real surprise. Pour vodka and half of the Chambord in a martini glass. Top with Champagne. Pour the remaining Chambord over the back of a spoon to make it float.
1-2 Serrano chiles, stems and seeds removed, minced
2 tablespoons cilantro (leaves and tender stems), finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped
1 Cut avocados in half. Remove seed. Scoop out avocado from the peel, put in a mixing bowl.
2 Using a fork, roughly mash the avocado. (Don’t overdo it! The guacamole should be a little chunky.) Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours.
FYI —Chilling tomatoes hurts their flavor, so don’t chop the tomatoes or add to the guacamole until ready to serve.
3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.
4 Just before serving, chop the tomato, add to the guacamole and mix.
Serve oozing out of the mouth of a pumpkin for that extra effect!
This is DAMN good Guac regardless of how you serve it!
Slice apples. To prevent the apples from browning dip them in orange juice. Lemon juice is usually used but its sour, and if the kids don’t like sour, orange will do just as well. Both are acidic and both prevent browning.
Chop the almonds and stick into the apple slices close to the skin to make teeth. Arrange slices on a platter to make monster smiles!!
Prepare cake mixes and bake according to directions (any size pans). Prepare pudding mix and chill until ready to assemble.Crumble white sandwich cookies in small batches in blender, they tend to stick, so scrape often. Set aside all but about 1/4 cup.
To the 1/4 cup cookie crumbs, add a few drops green food coloring and mix using a fork or shake in a jar.
When cakes are cooled to room temperature, crumble into a large bowl. Toss with half the remaining white cookie crumbs and the chilled pudding. You probably won’t need all of the pudding, mix with the cake and “feel” it, you don’t want it soggy, just moist; GENTLY COMBINE
Line new, clean kitty litter box. Put mixture into litter box.
Put three unwrapped Tootsie rolls in a microwave safe dish and heat until soft and pliable. Shape ends so they are no longer blunt, curving slightly. Repeat with 3 more Tootsie rolls and bury in mixture. Sprinkle the other half of cookie crumbs over top. Scatter the green cookie crumbs lightly over the top, this is supposed to look like the chlorophyll in kitty litter.
Heat remaining Tootsie Rolls, 3 at a time in the microwave until almost melted. Scrape them on top of the cake and sprinkle with cookie crumbs. Now spread 5 of the remaining Tootsie Rolls over the top; take one and heat until pliable, hang it over the side of the kitty litter box; sprinkling it lightly with cookie crumbs.
Place the box on a newspaper and sprinkle a few of the cookie crumbs around. Serve kitty litter cake with a *new* pooper scooper.
