Appetizer – Spooky Smiles- Halloween

Ingredients:

Red apples

Blanched Almonds

Orange juice

Slice apples.  To prevent the apples from browning dip them in orange juice. Lemon juice is usually used but its sour, and if the kids don’t like sour, orange will do just as well. Both are acidic and both prevent browning.

Chop the almonds and stick into the apple slices close to the skin to make teeth.  Arrange slices on a platter to make monster smiles!!

Main Course – Meat Loaf Hand – Halloween

Hand Meatloaf Recipe

Ingredients:
1 1/2 Groud Beef
3/4 Cup Mild Chunky style Salsa
1/2 Cup Onion and Garlic Refried Beans
1 egg (slightly beaten)
2 small bags of Doritos Cool Ranch Crushed
2 Cooked Eggs
salt and pepper to taste
4 Slices on Bacon cut in little 1 inch squares.
White Onion
For skin texture
1 Cup Ketchup + 1/2 Cup BBQ
1/4 Cup Dijon Mustard + 1/4 Cup Honey Mustard Dressing
Directions:
Pre Heat Oven at 365
To make the meatloaf mix beef , salsa, refried beans, slightly beaten egg, salt and pepper and crushed Doritos.
Once is mixed. Place Mixture in hand mold OR Place the mix on a parchment covered cookie sheet. and shape it as a hand if you choose to do this particular one, using yours as the model.fingernails_uncookedhand_white
Manipulate it at little into fingers, hand, Radius and Ulna (not much, just a little bit of these last). To make the Radius and Ulna make an indentation on the meat mold and place the cooked eggs in this indentation one next to the other it will resemble bone when cut.
Stick  a small hunk of the onion into the wrist to resemble the bone, Cover them with more of the beef mix.

Cover hand with little bacon squares.
Cover the entire hand with aluminum foil and bake for 45 minutes. Once the 45 minutes are done, pull it out, remove aluminum foil brush your hand with a mix of ketchup and bbq sauce. After is all covered, brush very lightly on the Mustard mix.
Lay Onion Slivers over the finger tips to look like finger nails
Place back in the oven and bake for another 15-20 minutes. Serve on a bed of rice, mashed potatoes etc to help hide imperfections.

Blood Slide – Bloody Glass Shard Candy

Step 1: Ingredients and Recipe

  • 2 cups sugar
  • 2/3 cup light corn syrup
  • 4 Tbs water
  • red food dye
  • bamboo skewer or tooth pic

Step 2: Bring Sugar Mixture to a Boil

Bring sugar, corn syrup, and 2 Tbs water to a boil in a small saucepan, stirring until sugar is dissolved. Don’t stir, but occasionally wash down sides of pan with a pastry brush dipped in cold water to prevent crystals from forming; boil until mixture turns golden, 5 to 7 minutes.

Step 3: Pour Sugar Out into Sheets

Line a few baking sheets with nonstick baking mats or parchment paper. (Cut it down to better fit the pan, it will make it easier to remove.

Pour the melted sugar mixture in a line down the center of the pan.  Using the back of a serving spoon or metal table spoon, spread sugar into a thin flat sheet.  Glass slides are pretty thin, so the thinner the better.  It will also be easier to cut in the next steps.

Drip one very small drop of red food color.  WARNING HERE if your pan it not level or you tile the pan the food color will run.

Once you have the mixture spread into a flat sheet, let it cool and harden for 5-10 minutes.  Once the mixture is hard, pull it away from the mat or parchment.  If its super thin, try not to crack it.

Step 4: Cut Sheets into Slides

Place the blade of a large knife directly into your burner to heat.  If you have an electric stove, you can use a lighter.  Once the blade is hot, begin to cut your sheets of sugar into strips.  Cut edges to be the length of a real slide.  Its good to have a glass slide to use as a template.

This step can be a bit annoying.  Don’t worry if you break a few, it happens.  Reheat the blade for each cut.  Between each cut, wash your blade off with water to keep the sugar from burning to your blade.  I don’t suggest using your best knife, since this heating and cooling isn’t the best treatment for your chef’s blade.  If the edges are really rough, dip your finger and water and smooth them out.

Lay your cut slides on your baking tray and refrigerate for at least 15 minutes.

These are VERY Fragile so be careful.  Worse case scenario you end up with bloody shards of glass.
